Known as the "dinosaur egg" of salts, Asin Tibuok is a whole, unbroken sea salt made by only a handful of families on the island of Alburquerque, Bohol in the Philippines. Coconut husks are soaked in seawater for months, burned to ash, filtered with brine, and slowly boiled inside clay pots that must be cracked open to reveal a single hollow orb of salt within. Each piece weighs between 900g and 1.2kg — no two are identical. Grate a whisper of it over grilled fish, ripe tomatoes, roasted squash, or dark chocolate — smoky, mineral, faintly sweet, and unmistakably alive.
